Ingredients

8- chicken tenderloins, boneless, skinless (4 servings)
1T - freshly minced or dried thyme
1T - paprika
1/3 cup - balsamic vinegar
1/3 cup - real maple syrup
1 can - fat free chicken broth
2T - peanut butter
Cooking spray
Directions
1.) Season chicken on both sides with paprika and thyme.
2.) Spray a large, medium-hot skillet with cooking spray.
3.) Cook seasoned chicken in skillet about 2.5 minutes on each side.
4.) In a bowl, combine vinegar, maple syrup, and chicken broth.
5.) Pour vinegar/syrup/broth mixture over chicken and cook on medium heat for 10-12 minutes until tender.
6.) Remove chicken and set aside to keep warm, keeping liquid in the pan on medium heat.
7.) Whisk two tablespoons of peanut butter into liquid mixture and bring to low boil. Cook about five minutes until thickened.
8.) Add chicken back into the pan along with steamed veggies of choice.
May be served over rice or noodles, if desired.
