Ingredients

    1 head of cabbage, chopped
    1 onion, chopped
    1/4 cup butter
    1/4 c flour
    salt and pepper to taste
    1 can chicken broth
    1 can Carnation evaporated milk, low fat
    1 cup mushrooms, chopped
    1 can peas
    6 chicken thighs, cooked, skin and bones removed

Directions

Cook chicken until done; remove skin and bones. Pull chicken into small chunks/shreds. Set aside.

Meanwhile, chop cabbage and cook in a large kettle of water until tender. In saucepan, saute onion and mushrooms in butter until tender. Stir in flour until smooth and well-blended. Add chicken broth and can of evaporated milk, stirring constantly over medium heat until smooth.

Drain water from cabbage and reserve if needed to thin the soup. Add the onions/mushrooms/soup base to the cabbage in the kettle. Add salt and pepper to taste. If too thick, add the reserved cabbage water until it is of the right consistency. Stir in a can of peas and the pulled chicken.
