Ingredients

2 tbsp olive oil
onions, sliced
garlic, crushed or sliced
fresh green beans (approx. 20 beans)
1 14 oz can stewed tomatoes, partially drained
salt and pepper (to taste)
Directions
Blanch green beans for 3 minutes and set aside on a towel to dry. Saute onions in oil until soft over medium heat, then add garlic and cook for 2 minutes. Add tomatoes and continue cooking for 5 minutes to reduce liquid. Add green beans and stir to coat beans. Season with salt and pepper to taste. Serve and enjoy. Makes 2-4 servings.
