    1 large onion, preferably sweet or yellow

    2 tsp olive oil

    2 slices bread, preferably Sara Lee Delightful brand

    2 tsp mayonnaise

    salt and pepper to taste


Slice an onion and sauté it in the two teaspoon of olive oil, adding a bit of water and then covering with a tight lid halfway through to help make them tender. When they're nicely caramelized add them to the bread (each slice spread with 1 tsp of mayonnaise - this adds wonderful flavor for not too many calories) and salt and pepper to taste. Everyone's very skeptical of this simple recipe, but after they try it they're hooked!

  • I love onions and will be making this for lunch today. I will, however, replace mayo with spicy mustard and add some mushrooms to the mix for variety...yum! - 12/14/07
