Introduction

Some days I just want a really filling, hearty soup without breaking my diet or it being too complicated; so I found the perfect solution! This soup is great with crackers or breads, or nothing at all on a rainy day and it is super healthy for you! Number of Servings: 7

Ingredients

    1 lb beef for stewing (cut into chunks)
    1/2 medium onion
    2 tsp garlic
    1 tsp olive oil
    1 can diced italian style tomatoes
    1 small (6oz) can tomato paste
    1 can corn (drained)
    1 can lima beans (drained)
    2 cups green beans
    2 cups peas
    2 medium/large yukon gold potatoes (cut into big chunks)

Directions

In a large pot, saute the onion and garlic with the olive oil.
Add the beef and brown it.
Add the rest of the ingredients and let simmer for an hour or more.
Enjoy!!!
