Ingredients

Turkey, Ground turkey, 93% lean, 4 oz
Old El Paso Taco Seasoning Mix (40% Less Sodium), 2 tsp Yellow Onion, 3/4 medium, chopped
1 tbsp extra virgin olive oil
Yellow Sweet Corn, Frozen, 1 cup kernels, thawed
Pace Chunky Salsa - Medium, 1 cup
Velveeta Light Cheese Product, 16 oz, cubed
Lactaid Fat Free Milk, 1 cup
Jalepeno, pickled, 0.25 cup, chopped
Scrambled Egg, 4 large
Red Bell Pepper (one medium pepper), .5 serving
Fage 0% - Greek Yogurt, 1 cup
Tortilla Chips, optional, not included in nutrition facts
Directions
1. Heat a large pot on medium-high heat. Pour in the olive oil and allow to heat up. Then brown the turkey with the fajita seasoning.
2. Once turkey is browned, add in the chopped onion. Once they have sweated out considerably, add in the red bell pepper. Then add in the corn.
3. Pour in the salsa.
4. Add the cheese cubes, and once melting, add in the milk and jalapeno.
5. Last, add in the scrambled eggs and the greek yogurt.
This is also a great topping for scrambled eggs by themselves, without the tortilla chips!
