Ingredients

    1 cup Whole Grain Quinoa
    1/4 cup Pine Nuts
    1 Tbsp. Extra Virgin Olive Oil
    3 cloves Garlic, minced
    2 large Scallions, chopped
    2 cups Chicken Broth
    1 tsp. black pepper

Directions

Heat oil in medium saucepan, saute scallions and garlic about 2 minutes. Add quinoa and saute about 2 more minutes. Add broth and bring to a boil; reduce heat to low and simmer 15 minutes. Stir in pine nuts and freshly cracked black pepper and remove from heat, allowing to stand about 5 minutes. Fluff with fork and serve.

    Incredible!
    This made for an absolutely delicious dinner - thank you! I added broccoli (at the end so it steamed up just right) and then sprinkled just a touch of parmesan cheese on it to serve.     Very good! I didn't add the scallions or fresh black pepper (didn't have either). I added spinach, though, because it's my favorite! - 3/7/10
