Ingredients

    1 whole chichen breast, boneless/skinless
    1 can coconut milk (lite will decrease fat and tastes just as good)
    1/2 cup mixed green/red bell peppers
    1/2 cup chopped onions
    2 tbsp yellow curry powder
    1 tbsp olive oil

Directions

cook chicken in 1/2 tbsp olive oil and set aside
sautee peppers/onions in 1/2 tbsp olive oil
while sauteeing peppers/onions mixture, cube chicken
when onions are transparent, add chicken back to mixture
sprinkle with curry powder, and cook for about 1min
add coconut milk
cook till thickened
serve over brown or jasmine rice
