Introduction

If you don't like it spicy, eliminate the jalapenos. If you don't like it spicy, eliminate the jalapenos.
Number of Servings: 6

Ingredients

    I onion chopped
    2 Jalapeno Peppers chopped
    4 closves garlic minced
    Saute above ingredients in
    1 tbsp Extra Virgin Olive Oil,
    Tofu, firm, 1 block (drained and crumbled)
    1 cup Tomato Sauce
    1 large can tomatoes, crushed
    1 Tablespoon cumin
    2 Bay Leaf
    1 Tablespoon Coriander seed
    2 cup Beef Broth,
    1 can red kidney beans
    1 teaspoon Oregano

Directions

After sauteeing the onion, peppers and garlic add the remaining ingredients. Simmer covered on low for one hour.

For truly vegetarian you can substitute water for the beef broth.

Makes 6 1 cup servings
