Ingredients

1 lb ground beef
2 cups dry Jasmine rice
3 Tbsp olive oil
3 tsp minced garlic
1 tsp grated ginger root
1/3 cup reduced sodium soy sauce
3 large eggs, scrambled
Directions
In large, high-sided skillet, brown ground beef. Drain and rinse under hot water to remove remaining fat then set aside.
In a separate sauce-pan, prepare Jasmine rice per package directions.
In another small skillet, scramble and cook eggs to be added later.
Towards the end of the rice cooking time, in the large skillet, heat olive oil then add ginger and garlic. Saute until garlic is lightly browned. Once rice is done, add to skillet and saute to preference.
Add soy sauce and stir until rice is coated with soy sauce
Add cooked eggs and ground beef.
Heat until warmed through
