Introduction
Great veggie sauce that can be used with baked potatoes, pasta or yummy on its own. Great veggie sauce that can be used with baked potatoes, pasta or yummy on its own.Number of Servings: 6
Ingredients

1 medium onion, chopped finely
2 garlic cloves, crushed
2 medium carrots, grated
2 celery sticks, chopped
3 tbsp Olive Oil
115 g/14 oz Can of chopped tomatoes
30 ml/2 tbsp Tomato Paste
1 vegetable stock cube + 450g water
(I use Oxo vegetable stock cubes as I'm in the UK but you can use any stock cube, remember to check the calories!)
1 tsp dried Marjoram (or 1 tbsp of fresh)
Black pepper (& salt if desired) to taste
Directions
1. In a large sauce pan gently fry the onion, garlic, carrots & celery until soft (about 5 mins)
2. Add the lentils, tomatoes, tomato paste, vegetable stock, & marjoram & seasoning to taste
3. Bring the mixture to the boil then partially cover and simmer for 20 mins until thick & the lentils are soft. Try not to stir too much while it is simmering as it can break the lentils up.
Great served over baked potato, or pasta or delicious just on its own with salad for lunch.
