Ingredients

    2 Med. Potatoes
    2 Cloves Garlic , minced
    1/3 C Nonfat Milk
    1 Tbsp Margarine
    1/4 C Parmessan Cheese or hard cheese of your choice
    6 Sprigs Parsley, chopped
    Black Pepper to taste
    Sea Salt to taste

Directions

Clean and rinse potatoes. With skins on dice and place in boiling water till fork tender. Drain and reserve 2 tablespoon of water. Add milk, margarine, salt and pepper and mash. Adjust the amount of water you add back to the creaminest you want. Fold in cheese and parsley.
