Introduction

These taste just like what grandma used to make and they are vegan! These taste just like what grandma used to make and they are vegan!
Number of Servings: 14

Ingredients

    2 large bananas overly ripe
    1 1/2 cup oat flour (easily made by blending oatmeal in a blender or food processor or even a blender: just blend until you have a fine powder)
    1/2 cup white flour
    4 oz walnuts
    1/4 cup packed brown sugar
    1/4 cup olive oil
    1 cup lite coconut milk
    1 tsp baking soda
    1 tsp cinnamon

Directions

Mix sugar and oil in a mixer or bowl. Add coconut milk and banana. Combine well. Seperately, in a different bowl or cup, combine the oat flour, white flour, cinnamon, and baking soda. Combine and stir until the batter just barely comes together. Add walnuts by hand.

Portion out into muffin cups or molds. Makes about 14 muffins or 1 loaf

Bake at 350 for about 20 min for muffins and 40 min for bread

Serving Size: 14 muffins or 14 slices of bread if made as a loaf
