Introduction

I decided to play with this recipe to see if I could lighten it up a bit. I LOVE them even more than the originals. They are soft and taste even better! Ingredients

    1/2 C. shortening
    6 Tbsp solid pack pumpkin
    1 ½ C. sugar
    2 egg whites
    1 tsp baking soda
    1/4 tsp salt
    2 tsp cream of tartar
    2 2/3 cups flour

    ¼ cup sugar
    1 tsp pumpkin pie spice

Directions

Beat together shortening, pumpkin, sugar and egg whites. Add flour, cream of tartar, baking soda and salt. Mix together. Pinch off a small amount and roll into a small ball (about 1”) Roll in pumpkin pie spice-sugar mixture and place on a greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cookies are done when they are lightly browned. Do not overbake or they will be crispy instead of soft.
