Ingredients

    1 TBSP Olive Oil
    1 Medium to Large Onion
    1 lb Yukon Gold Potatoes peeled and diced
    2 tsp Curry Powder
    1 tsp Chili Powder
    1/2 tsp Cumin powder
    1/2 tsp Tumeric
    1 tsp Ginger
    1/2 tsp Pepper
    1 Medium head of cauliflower, clopped up into bite sized pieces
    2 cups frozen peas
    1/2 cup to 1 cup of water

Directions

Heat oil in large pan or wok over medium-high heat. Add onions and cook until transluscent, about 5 minutes. Add potatoes, cover and cook, stiring once or twice for about 5 minutes. If you find the potatoes are sticking, add a bit of water. Add the spices and the pepper, a touch more water. Cover for another minute or two. Add the cauliflower, stir again, add a bit more water, and cover again. Let the vegetables steam for 10 minutes, then stir in the frozen peas. If the potatoes are sticking, add more water, and cover again for another 10 minutes.
