Ingredients

    2 cups multi grain oatmeal
    4 oz eggbeaters or egg whites
    2 tbsp vanilla extract
    8 teaspoons splenda
    3 tablespoons cinnamon
    2 cups of chopped peeled apples
    3 cups of boiling water.

Directions

mix all but apples in bowl stir well
let set for 10 mins. so oatmeal absorbs some liquid
add in chopped apples chop finely to assure full baking. use non stick spray on muffin tins.
bake in 350 preheated oven between 35 and 45 mins til they are almost rubbery to touch.

makes 4 huge muffins and that is 2 servings. great pre - work out meal.

    You all should try the Good Housekeeping SuperMarket Diet, I think you can find it on google. Now those have the baking soda and baking powder. I have one every morning with some peanut butter, apple or banana, coffee & milk. About 450 calories total. Love it! - 2/26/08

    Bad
    This doesn't have any baking powder or baking soda so it doesn't rise like a muffin. I cooked it the full time and then microwaved it some more and it was still doughy wit limited taste. Can not recommend this one at all. Ended up throwing the in the trash. - 2/10/08

    This seems simple to make and I am no baker, but I bet even I can do it. It sounds good especially with some green tea on the cold winter evenings - 11/9/07
