Introduction

Ingredients

    1 small red onion, sliced
    1/4 c. balsamic vinegar
    4 Mission jalapeņo cheddar wraps
    3/4 c. shredded Mexican cheese blend
    8 slices deli turkey

Directions

Marinate onion in vinegar for 5 minutes. Drain. Warm two tortillas in a nonstick skillet for 45 seconds over medium-high heat. Flip. Pull tortillas up so they don't overlap. Working on half of each tortilla, sprinkle 1/4 of the cheese, cover with 2 slices of turkey, and top with 1/4 of the onion. Fold tortillas in half, press with a spatula to flatten, and cook until cheese starts to melt (about 2 minutes). Flip and cook until second side is golden (1-2 minutes more). Remove from heat. Make two more with the remaining ingredients.

Serving Size: Makes 4 quesadillas
