Ingredients

    480g lean pork, diced
    1 tbs cornflour
    1/2 cup onion, finely diced
    1 cup carrots, sliced
    1 cup celery, sliced
    400g can chopped tomatoes
    2 tsp chicken stock powder
    3/4 cup wholemeal self-raising flour
    1 tbs olive oil
    1 tbs parsley, finely chopped

Directions

Place pork and cornflour into a 3lt-casserole dish (with a lid) and stir until pork is coated with cornflour. Add all other ingredients and mix together. Put casserole (lid on) into an oven pre-heated to 180 degrees and cook for one hour.
To make dumplings, mix oil into flour, mix in parsley and enough water to make a soft dough. Knead into a ball, divide into 12 pieces and shape into dumplings.
Add dumplings to casserole, cover with lid and cook for 5 minutes. Gently turn dumplings and cook for a further 5 minutes. Serve.

    This sounds GREAT!!! I am guessing that the oven temp is in "Europe" degrees? I will bake at 350 here in the states... - 5/24/11

    Sorry, in Australia we use the same weights, measures and temperatures as in Europe and it's just too much brain strain to work out the changeover - perhaps I need to eat more fish!
