Ingredients

    2/3 cup (dry) whole wheat Israeli style couscous
    1 T extra virgin olive oil
    1 1/2 cups chopped mushrooms
    1 chopped plum tomato
    1-2 cloves minced garlic
    2 cups chopped fresh spinach
    2 ounces goat cheese, crumbled
    1 tsp extra virgin olive oil
    2 4-oz tilapia filets

Directions

Cook couscous as directed on package. In the meantime, heat oil in a pan. Then saute mushrooms, garlic, and tomatoes for a couple of minutes, stirring occassionally. The veggies will cook down and the liquid in the pan will increase. Throw the spinach on top, salt and pepper to taste, and cover. Turn on low to simmer. When the couscous is done cooking, turn the pan off and leave covered. Salt and pepper your tilapia to taste, then saute in another pan with one tsp olive oil. Cook for a couple of minutes on each side until fish flakes. Mix your couscous with your vegetables and put on each of two plates. Sprinkle with goat cheese. Serve tilapia either on or with couscous & veggies.
