Introduction

Ingredients

    Crust:
    1 1/4 cup flour
    1/3 cup oil
    1/2 tsp. salt
    3-4 tbsp. cold water

    Filling:
    8 oz. imitation crab, chopped
    1 10 oz. package frozen spinach, thawed and drianed
    1 can (12 oz.) fat-free evaporated milk
    3/4 cup shredded swiss cheese
    7 egg whites, or 2 cups Egg Beaters
    1 tsp. mustard
    1/8 tsp. nutmeg
    3/4 tsp. salt

Directions

Mix flour, salt, and oil until mixture is mealy. Add enough water to make the dough stick together and leave the sides of the bowl. Roll flat between two sheets of waxed paper and place in a pie pan. Prick bottom and sides of crust with fork, and bake at 400 degrees for 10 minutes.

While crust is baking, mix remaining ingredients in medium mixing bowl. Place in crust and bake about 50 minutes at 350 degrees, or until center is set. Allow to rest a few minutes before cutting.

    Very Good
    I made this with half egg beaters and 3 whole eggs. I also found the lowest fat swiss. I have never made an oil crust, but will do so again. Healthier than crisco, I used canola. - 3/5/10
