Introduction

I make this sauce at least once a week. The baby spinach adds lots of extra nutrients and is a great lo-cal way to bulk up the sauce.

Goes well over whole wheat pasta or spaghetti topped with a bit of grated cheese. Add a side salad and you have a delicious balanced meal.

Ingredients

    Nature's Promise Organic Garden Vegetable Pasta Sauce, 3 cup
    Del Monte Diced Tomatoes, No Salt Added, 14.5 oz can
    Ground Turkey, 93% lean, 16 oz
    Baby Spinach, fresh, 3 cup
    Onion, diced, .5 medium
    Garlic, 3 cloves
    Olive Oil, 1 Tbsp
    Oregano, 1 Tbsp
    Garlic Powder, .5 Tbsp
    Other Italian Spices to taste
    1 13.75 ox box of whole wheat spaghetti

Directions

Add olive oil, garlic, and onion to a large saute pan. Saute over medium heat until golden. Then brown the turkey in the same pan.

Add the tomato sauce and can of diced tomatoes to the pan. Stir well. Simmer for about 5-10 minutes

Stir in the oregano and garlic powder.

Lay the spinach on top of the sauce and cover the pan. Allow the spinach to steam for about 5 minutes. Then stir it into the sauce. Allow it to cook for another 15-20 minutes.

Serving Size: Makes 10 half-cup servings
