This is a tasty, fast vegetable side dish that the whole family will love. This is a tasty, fast vegetable side dish that the whole family will love.
Number of Servings: 2


    1 Medium Zucchini squash, diced
    1 Medium Yellow (summer) Squash, diced
    1 medium size garlic clove, minced or pressed
    1/2 cup chopped red onion
    1 Tablespoon Olive Oil
    1 teaspoon black pepper
    1/8 cup parmesan cheese, grated


In a medium sized skillet, heat the olive oil over medium heat. Place the onions and the garlic into the skillet and saute until onions are clear. Add in pepper, zucchini and yellow squash; cook covered until squash is cooked (but still slightly firm.) Remove from heat. Sprinkle Parmesan cheese over the entire mixture and cover until ready to serve.
