Ingredients

1) 3 Large eggs
2) 1 cup Whole Milk
3) 1 tsp salt
4) 1 tsp pepper
5) 3 cups all purpose flour
6) 2 1/2 pounds round steak cut 1/2 in thick, and cut into 8 pieces
7) Oil to cover bottom of pan 1/8" deep. (1/2 cup used in recipe as estimate of 1 tbsp oil absorbed into crust of each serving as calories)
Directions
1) In shallow bowl, whisk together eggs, milk, salt, seasoned salt, and pepper until well blended. Place flour in separate shallow bowl or plate.
2) Pound meat with meat mallet to 1/4 inch thickness. Coat with flour, shaking off excess. Dip into egg mixture, then again into flour. coating evenly.
3) Heat about 1/8 inch of oil in skillet over medium heat. Add meat and cook 4
minutes on each side, or until browned and cooked through. you can make a gravy of left over flour and egg/milk mixture to pour on top if you wish. (No allowance for gravy calories in this recipe)
