Introduction

My family loves this recipe. I lightened up a Taste of Home recipe, by cutting the fat in half, replacing it with extra lemon juice, and using whole wheat pasta. Mmm! I always have to double it whenever I make it. Leftovers are just as delicious a day later. My family loves this recipe. Ingredients

    5 green onions, chopped
    1 1/2 teaspoons butter
    2 garlic cloves, minced
    1 1/2 teaspoons olive oil
14 ounces boneless skinless chicken breasts, cubed (canned chicken works very well)
    4 tablespoons lemon juice, divided
    3 tablespoons minced fresh parsley
    1 teaspoon seasoned salt
    1/2 teaspoon lemon-pepper seasoning
1 package (7 ounces) angel hair pasta

Directions

In a large skillet, saute onions in butter, oil, and 2 tablespoons lemon juice until tender. Add garlic; cook 1 minute longer. Stir in the chicken, rest of the lemon juice, parsley, seasoned salt and lemon-pepper. Saute for 15-20 minutes or until chicken is no longer pink.
Meanwhile, cook spaghetti according to package directions; drain. Add to chicken mixture; toss to coat. Yield: 4 servings.
