Introduction

Green peppers stuffed with a delicious rice mixture. Very easy to make and versatile. Green peppers stuffed with a delicious rice mixture. Very easy to make and versatile.
Number of Servings: 4

Ingredients

    1 C brown rice
    4 whole bell peppers
    1 lb ground turkey
    1 1/4 C salsa
    2 tsp chili powder
    1/3 C chopped onions
    1/3 C chopped celery
    1 C grated Mexican style cheese

Directions

Cook rice according to package directions.
Slice tops off bell peppers.
Brown turkey with onions and celery.
Mix 1 C salsa with chili powder and add to turkey. When rice is cooked, add to turkey. Mix well and put in peppers. Bake at 350 F for 30 minutes. For the last 5 - 10 minutes, cover with remaining salsa and sprinkle with cheese.

I only bake mine for 15 minutes, as I prefer my peppers crunchy.
