Ingredients

    cooking spray
    2 c. frozen hash brown potatoes
    1 c frozen corn kernels, thawed
    1c frozen pepper strips, thawed
    8 oz. turkey sausage, thinly sliced
    1 c fat free milk
    2 large eggs
    1/4 t salt
    1/4 t pepper
    3/4 c low fat shredded cheddar cheese

Directions

Preheat oven to 350. Coat medium square or rectangular baking dish with cooking spray.

Place potatoes and then vegetables in baking dish; top with sausage.

In a small bowl, beat together milk, eggs, salt & pepper; pour over sausage and then sprinkle with cheese.

Bake until hot and cheese is browned, about 45 mins. Cut into 6 pieces and serve.

    Followed the recipe except used 1/2 the milk. It was still way too much liquid. Tasted rather bland. It was okay. - 1/13/15
