Introduction

Number of Servings: 6

Ingredients

    2 tsp. Olive Oil
    3 Tbsp. Onion
    1 15.5 oz Can black beans
    1 10 oz. Can Sweet Yellow corn
    1 Tbsp. Brown sugar
    1/4 Cup Salsa
    1 1/2 Cup Monterey Jack cheese
    1/4 tsp. Cayenne Pepper flakes

    12 Tortillas (I use whole wheat carb balance)
    Cooking spray

Directions

Heat Olive oil on medium heat. Add finely chopped onion and saute until tender, about 2 minutes. Add Beans, Corn, and brown sugar. Heat through. Add salsa and cayenne pepper flakes. Spray large non-stick skillet with cooking spray and add a tortilla. Spread filling and cheese on top and top with second tortilla. Flip, cook and serve. I serve with a mixture of sour cream and salsa.

    Very Good
    I fixed this tonight. I cut up 2 jalapeno peppers and 1 red pepper and added to the blackbean & corn. I have homemade taco seasoning that I mixed up w/the mixture. I did not add the brown sugar. It was very good and easy to put together - 1/8/21
