Ingredients

1 onion - medium diced
1 garlic clove - minced
1 Tbsp Extra Virgin Olive Oil
2 Cans chopped tomatoes
1 Tbsp tomato puree ( tomato paste)
2 Tbsp Red Wine ( more or less to ones own taste)
Sea Salt - small pinch
Ground Black pepper - to your own taste
1/2 tsp. Coriander - dried
1/2 tsp. thyme - dried
1/2 tsp. mixed herbs - dried
Bell Peppers ( 1 red & 1 green) sliced or diced
4 Chicken Breasts - No skin or bones
Directions
Place Extra Virgin Olive Oil into a pan and add onion, saute add minced garlic and peppers stir very well. Add the chopped tomatoes and tomato puree and wine mix well. Add seasonings and mix well.
Slice Chicken on thicker side but not all the way through. Place into sauce and cover with a heavy lid on top of chicken. Cook for 12 minutes on side then turn and cook remaining time or until cooked throughout.
Serve with sauce over Chicken.
