THIS is the only truly vegan side I've had that I love! Makes up in a flash and even those that aren't fond of cauliflower will be yumming this one down! Ingredients

1.5 Lbs cauliflower florets
.5 cups parsley(VERY finely chopped)
.5 cup fresh mint(very FINELY chopped)
.5 cup chopped red onion( about half a fist size onion)
4.5 to 5 Tbls fresh lime juice( about 2 fruits)
2 Tbls olive oil
1 teas salt
1 teas black pepper
.33 cup pine nuts
Directions
In a food processor( NOT A BLENDER) pulse cauliflower until it looks like rice. Set aside in serving bowl
In food processor- blend parsley, mint, onion, lime juice, olive oil, and salt & pepper into a smooth paste.
Pour over cauliflower and blend well. Using a spoon pour raw pine nuts into mix and stir well.
Serving Size: Makes Ten 1/2 cup servings
