Ingredients

    1 lb. salmon filet, cut into 4 pieces
    1 lb. asparagus, trimmed
    3 tsp. lemon juice, divided
    1/4 cup reduced-fat mayonnaise
    1/4 cup non-fat plain yogurt
    1 tsp. Dijon mustard
    1/4 tsp. grated lemon peel

Directions

- Preheat oven to 425 degrees F.
- On baking sheet, arrange salmon and asparagus. Drizzle evenly with 2 tsp. lemon juice.
- Roast salmon and asparagus 15 minutes or until salmon flakes with a fork and asparagus is tender.
- Meanwhile, in a 1-quart saucepan, bring 1 tsp. lemon juice, mayonnaise, yogurt, mustard and lemon peel just to a boil over medium heat, stirring frequently. Reduce heat and simmer 1 minute. Serve sauce over salmon and asparagus.

- Makes 4 servings.

    It turned out great. Love it! I might add that it would be best to use a little thicker asparagus. I used very young/thin and they got a little crispy. - 9/19/10
