Ingredients

1 cup white northern beans (rinsed, soaked, pressure-cooked and pureed)
3 eggs
3 tbsp canola oil
10 tbsp sugar (0.66 cups) + 1 tbsp molasses
1/2 cup unsweetened cocoa powder + 2 tbsp instant coffee (dissolved in 1 tsp water)
1/2 cup chocolate chips
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
1/2 cup All Purpose Flour + 4 tbsp Almond Meal
1/2 cup Zucchini grated and squeezed dry.
Directions
Method
•Preheat the oven to 350 F.
•Cream sugar, molasses and oil. Add eggs and beat. To this add bean puree, coffee decoction, vanilla extract and grated zucchini and mix.
•Mix all dry ingredients together: APF + Almond Meal + cocoa + baking powder + baking soda + salt.
•Alternatingly add dry ingredient to the wet, gently mixing the two.
•Stir in chocolate chips in the end to make sure they don't break.
•Pour in a 8" X 8" baking container and bake for 30-35 min.
