Ingredients

    1 pound ground turkey
    1/2 large onion, chopped
    3 cloves garlic, minced
    4 stalks celery, sliced
    3 cups carrots, sliced
    1 cup dried or canned green peas, rinsed and drained
    1 28 oz. can crushed tomatoes
    3 bay leaves
    1 tsp crushed cloves
    2 tsp cayenne pepper
    1 tsp paprika
    16 oz. frozen mixed vegetables
    2.5 cups brown rice, uncooked
    12 cups water

Directions

Brown and drain the ground turkey; meanwhile cut the vegetables. Combine all ingredients in a large pot, stir, and bring to a boil; cover and simmer for 45-60 minutes, or until rice is cooked tender.

Serve in warmed bowls alongside crusty bread or croutons, if desired.
