Ingredients

1/2 cup plus 2 Tbsp. canola or vegetable oil, divided
1/2 cup flour
1/2 medium white or yellow onion, finely chopped
1 tube Lightlife Gimme Lean ground sausage style veggie protein
4 cups unsweetened non-dairy milk (I used soymilk)
1/2 to 1 tsp. pepper
1 to 2 tsp. seasoned salt
Directions
In a large skillet, on medium-high, heat cooking spray and add chopped onion. Saute until almost cooked. Add the tube of Gimme Lean and break it up with a spatula while cooking. Once the sausage is crumbled and cooked, set aside the onion/sausage mixture in a bowl.
Pour the milk into a saucepan on the stovetop and turn to medium. Heat until hot, but not boiling. When the soymilk is hot, turn the heat off.
In the same skillet you used for the onions and sausage, turn heat to low and add 1/2 cup oil. Heat the oil and then stir in 1/2 cup flour.
Stir and cook the roux for 3-5 minutes, over low heat, then slowly whisk in the hot milk.
Bring to a simmer while stirring to avoid lumps.
Once the gravy thickens, turn heat off and stir in seasoned salt and pepper. Stir in the onion/sausage mixture.
Serve with biscuits - top them with the hot sausage gravy.
**To reheat the gravy, just stir in a little non-dairy milk before you heat it on the stovetop or in the microwave.**
