Ingredients

    20 oz of shredded red potato
    1 tsp olive oil
    1/4 cup chopped onion
    8 slices cooked Jenny-O turkey bacon, crumbled
    1 cup 50% red. fat shredded cheddar cheese
    1/2 cup skim milk
    1 1/2 cups egg substitute
    1/2 cup chopped red pepper

Directions

Saute chopped onion in 1 tsp hot olive oil until translucent. Add in shredded potato and cook until browned. Layer potatoes, bacon crumbles, and cheese in crock pot. Combine milk and egg substitute. Whisk in chopped peppers. Pour over layers in pot. Cook on low overnight (6-8 hours until set).
