Introduction

Made a traditional dish with some lower calorie/sugar/fat substitutions. Made a traditional dish with some lower calorie/sugar/fat substitutions.

Ingredients

    1 1.5oz (42g) Jell-O Sugar Free Fat Free Instant Vanilla Pudding Mix
    3 Cups skim Milk
    1 tsp. Vanilla Extract
    Reduced Fat Graham Crackers
    1 16oz container of Fat Free cool whip
    1 container Pillsbury Reduced Sugar chocolate fudge frosting

Directions

Line a 9 x 13" dish with graham crackers (trim to fit).
Mix dry pudding and milk in large bowl.
Stir in vanilla extract and fold in cool whip.
Pour 1/2 of pudding filling over graham crackers.
Place another layer of crackers and add the remainder of filling.
Place final layer of graham crackers and top with chocolate icing.

Refrigerate.

*Note--I microwave the frosting after removing the foiled top for 10 seconds to make it easier to spread over the crackers on top. Also, I would wait until the dessert is refrigerated for at least an hour to serve so pudding mixture is cool and crackers have softened.

    another alternative to the chocolate frosting is, dark chocolate candy bar squares, melt them and drizzle them over the top - 3/12/11

    Incredible!
    When I first made this, I wasn't sure there would be enough of that chocolate "icing" to go around. It was a thin layer, but it was really good! Depth isn't everything! - 7/31/10
