Introduction

Ingredients

    1 bag shredded hash brown potatoes
    3 chicken breasts, shredded (I used leftover chicken breasts)
    1/2 c diced onions
    4 T low-fat sour cream
    1 c fat-free chicken broth
    1 c non-fat milk
    1 low fat mozzarella string cheese,, shredded
    2 oz low fat cheddar cheese, shredded
    1 slice fat free American cheese, diced
    Herbs to taste - I used herbes de provance, italian season, Mrs. Dash garlic, and a few grinds of pepper

    Topping: 1/2 c Panko bread crumbs, unseasoned
    1/4 c grated cheese - your choice (I used Asiago)
    Several sprays of butter

Directions

Using a large bowl, mix the hash brown potatoes, chicken, onion, cheese, and spices. Mix the sour cream, broth and milk and add to potato mixture. Spray a 3 quart casserole and place mixture in casserole. Top with bread crumb mixture and spray with the butter spray.

Cover with tin foil and bake in a 350 degree oven for 45 minutes. Uncover and bake for an additional 15 minutes or until golden brown.

    Incredible!
    This recipe is very versatile. It can be modified many ways, and still be delicious. My family's favorite way is with ground beef and beef broth (of course this changes the nutrition info slightly). But the potatoes and cheese are an excellent foundation for this hearty casserole. - 11/29/15
