Introduction

This is a tred and true recipe that my husband LOVES. However the original recipe called fro 1 cup of Crisco oil! I have been messing with this recipe to cut out some of the bad calories. This version was FANTASTIC, even better than the original. I think you could easily add a whole wheat flour, or even a little oatmeal to fatten the nutrition value. Number of Servings: 30

Ingredients

    2 c. sugar
    4 oz iDannon Activa low fat vanilla yogurt
    1/3 cup Sunflower oil
    4 ripe bananas
    4 eggs
    2 cups flour
    2 tsps baking soda
    1 tsp salt

Directions

Crush bananas and pour sugar over top, mix and let stand for about 5 minutes. Add oil, yogurt of and eggs, combine well. Add rest of ingredients, stir well.
Bake in sprayed and floured loaf pans at 375 degrees for about 45 minutes (check by inserting toothpick in center of loaf. If totohpick comes out clean they are done). Store in refrigerator.

Serving Size: Makes 2 loaves about 15 slices each
