Introduction

Ingredients

    1/2 cup quinoa
    1 cup water

    1 (15-oz) can garbanzo beans, drained
    1 bunch kale, tough stem removed, rinsed, and chopped
    1 clove garlic, peeled and minced
    1 Tbsp fresh lemon juice, or more to taste
    1 tsp dried tarragon
    1 tsp dijon or whole-grain mustard
    1.5 Tbs olive oil
    salt & pepper to taste


Directions

1. Bring the quinoa and water to a boil in a small saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes.

2. Steam kale in a covered saute pan until tender--adding water as needed, about 15 minutes

3. Scrape the cooked quinoa into a mixing bowl. Add the garbanzo beans, kale, garlic, lemon juice, tarragon, mustard, and olive oil. Stir until evenly mixed. Season to taste with salt and black pepper before serving.



Serving Size: makes ~4 1-cup servings
