Introduction

Defrost spinach.
Line a 12 cup muffin tin with foil baking cups. Spray with cooking spray.
Combine egg beaters, cheese, peppers, onions and spinach in a bowl. divide evenly among muffin cups. bake at 350 for 20 minyutes.

    1 package 10 oz. frozen chopped spinach
    3/4 cup Egg Beaters
    3/4 cup shredded reduced fat cheese
    1/4 cup diced green bell peppers
    1/4 cup diced onions
    3 drops hot pepper sauce (optional)

Directions

Combine all ingredients.
Divide evenly in muffin cups.
Bake 20 minutes at 350.
