Ingredients

    1 1/2 cups Bloody Mary Mix (I make my own)
    1 1/2 cups finely diced tomato (I use canned, no salt added)
    1 cup finely diced bell pepper
    3/4 cup seeded, peeled cucumber--finely chopped
    3/4 cup finely diced red onion
    2 Tbsp fresh lime juice
    1 tsp red wine vinegar
    1tsp Worcestershire sauce
    1/2 tsp freshly ground black pepper
    2 garlic cloves, crushed
    1 (5.5-oz) can low-sodium vegetable juice (i.e. V8)
    1 (5.5-oz) can tomato juice

Directions

For gazpacho with texture: Combine the liquids, seasonings, and half the diced vegetables in a food processor or blender. Blend until veggies are finely chopped. Stir in the remaining vegetables, adjust seasonings if necessary, and chill

For smoother gazpacho: Combine all ingredients into a food processor or blender; process until somewhat smooth.

Serving Size: Makes 6 1-cup servings
