Ingredients

8 ounces of gluten free rice linguini pasta
1 cup skim milk
1 tablespoon rice flour (or regular flour)
1 tablespoon smart balance buttery spread
2 tablespoons mascarpone cheese
4 ounces of shredded parmigiano-reggiano cheese
2 tablespoons of fresh basil, chopped
garlic salt/pepper
grilled chicken breast
Directions
Cook the pasta according to package directions - omitting any oil and salt. Drain, set aside and keep warm.
As the pasta is cooking:
In a smal bowl, whisk together the milk, garlic salt, pepper, and chopped basil.
In a small saucepan, melt the smart balance buttery spread. Whisk in the flour and allow to cook 2 minutes, stirring constantly.
Whisk the milk mixture into the flour/butter mixture and cook on medium heat approximately 3 minutes, or until slightly thickened. Remove from heat and stir in cheeses until smooth.
Toss cheese sauce with pasta. Top with grilled chicken breast and some fresh basil.
Serving Size: Makes 4 1-cup servings
