6 oz soyrizo
6 large eggs
2 cups chopped onion
4 oz mushrooms, sliced
2 oz spinach
1 small red bell pepper, diced
1 tbs. olive oil
Directions
saute onion and red bell pepper until soft, add mushrooms until cooked through, add spinach until wilted.
Beat eggs and soyrizo until well mixed. Add to pan with vegetables and mix well. Cook until done.
