Number of Servings: 6

Ingredients

    1 cup of brown rice...start in skilletmed-high heat...also preheat oven 425
    [ or use leftover rice reduces cooking time!]
    ...then skip water
    1 1/2 cup of water boiling [canned tomatoes replaces some of water needed to cook rice]
    1 can 14 oz. of black beans drained and rinsed
    1 can of refried beans, low fat,low salt
    1 can 14 oz.of spicy tomatoes or 1 cup of salsa,
    1 -2 tablespoons
    now add cup or less of chopped green peppers, frozen corn ,
    chopped fresh tomatoes , and a couple pinches of chopped
    cilantro.

Directions

Layer this in oven proof skillet...with lid helps
gets this pan full bubbling and ,,,
now top this with 2 -4 well-beaten eggs
with 2 tablespoons low fat sour cream or dense plain greek
style yogurt....,pop in hot oven till ...eggs solid about 15-20mins,

Serving Size: this divides well into 6-8 1cup servings or 1cup 1/2
