Ingredients

1 T olive oil
1 lb chicken sausage (ground)
1 large onion, diced
6 garlic cloves, minced
4 anchovies or 2 t anchovy paste
1 T Italian seasoning
1/2 t red pepper flakes
28 ounce can crushed tomatoes
2 T capers, drained
1 cup pitted olives (green/black or mix), chopped
salt and pepper
6 servings high fiber pasta
1/4 c fresh basil or parsley
8 ounces Bocconcini, sliced in half
Directions
Heat olive oil over medium heat. Add sausage, onion, garlic, anchovies, Italian seasoning and red pepper flakes.
When sausage is browned, add tomatoes, capers and olives. Season with salt/pepper to taste. Simmer for 30 minutes.
Cook pasta according to package directions. Mix basil and bocconcini into sauce and toss with pasta. Serve.
