super simple recipe that tastes great. Could easily replace pepperoni with vegetarian alternative to create a great vegetarian meal. We make this for dinner when we want to eat light but could be used for lunch or appetizer. super simple recipe that tastes great. Ingredients

    2 large portabella mushrooms
    1/4c red bell pepper, chopped
    1/4c zucchini, chopped
    14 slices Hormel pepperoni slices, chopped
    2ts Parmesan cheese
    mozzarella slices
    1/2ts olive oil


Directions

1. chop red bell pepper, zucchini and pepperoni

2. clean out mushroom by removing stem and gills. Be careful not to break mushroom.

3. on medium heat saute bell pepper and zucchini in olive oil for about 4-5 minutes or until just barely soft.

4. mix bell pepper, zucchini, pepperoni and parmesan cheese in a bowl and then place in mushroom.

5. place roma tomato slice on top of mixture and then cover in mozzarella slices.

6. place on grill and cook for 5-10 minutes on medium heat or until cheese melts. (lower heat if cheese is melting before mushroom is softened.)

Serving Size: makes 2 mushrooms
