Introduction

Ingredients

    Spinach, fresh, 2 cup
    Goat Cheese, Soft, 1.5 oz
    Smoked Salmon (lox), 2 oz
    Egg Whites (Organic Valley - Family of Farms), 0.25 cup
    Parsley, fresh, 0.33 cup
    Salt, .25 tsp
    Pepper, black, 4 dash

Directions

Place all ingredients in medium-sized dry nonstick pan (spinach on bottom) except egg whites.

Let fry over medium heat for a few minutes, then pour egg whites over.

Cook until slightly browned on bottom, then flip and brown slightly on other side. Serve hot.

(You can also saute a few shallots or chopped onions in the pan before you add the spinach--the traditional French recipe includes a teaspoon of herbes de provence instead of fresh parsley. The ingredients vary--no need for salmon, no need for goat cheese, just up the salt if you don't include those.)
