Introduction

This is an unbelievable MUCH healthier version of traditional Caesar dressing! I used egg beaters instead of raw egg yolks- and substituted avacado as a thickener to cut down on the salt from the usual parmesan. I also substituted some lemon juice for the normal vinegar the recipe calls for to keep the avacado from turning. This is heavenly served over grilled Romaine( Yes I said GRILLED romaine) with either shrimp or chicken , boiled eggs and croutons! Ingredients

    2 large cloves garlic( 7-10 grams)
    5 anchovy fillets( packed in oil)
    the juice of one lemon( 1.5 to 2 Tbls)
    .5 cup plus 2 Tbls egg beaters
    8Tbls shredded parmesan(40grams)
    2 pinches black pepper
    *optional pinch salt
    3 Tbls Sherry wine or white wine vinegar
    3.5 oz (100grams) avacado( 2 small or one med)


Directions

Place garlic, anchovies, lemon juice and olive oil in blender and blend very smooth- add remaining ingredients and blend 60 seconds till smooth and a bit fluffy.

Allow to come to room temp- serve over romaine lettuce with croutons. fresh cracked pepper and additional shredded parmesan if desired. Very good with grilled chicken or shrimp. boiled eggs, olives and tomatoes!

    Where would I find the Anchovies?? I have never bought them before!!! But, I can't wait to make this!!! - 7/7/11

    They are usually in the same area as all the canned meat and fish...like Tuna. They'll be near the canned clams, shrimp and sardines. You can also substitute anchovy paste- 1 teas per anchovy.
