Introduction

I combined several recipes I read to create a flavorful, moist roast turkey recipe! The flavor of the turkey is the star here, this was my second attempt at roasting a turkey ever and my mom is still raving about it! I sliced the leftovers and froze in small vaccum bags for sandwich meat (minus the sodium of store bought)! Skim the fat off the drippings, freeze in ice cube trays and then transfer to a large freezer bag-use to season cooking vegetables, soups, etc! Ingredients

    1 (7-8 pound) bone-in turkey breast, thawed and patted dry
    1 orange, washed and quartered
    1 Tbsp salt
    1 Tbsp dried Italian seasonings (thyme, parsley, basil, oregano)
    1/2 Tbsp whole wheat pastry flour
    I Can't Believe It's Not Butter or Olive oil (in a spray mister)
    Fresh basil/parsley (optional)
    Large oven bag (turkey size if roasting a larger turkey breast)

Directions

Preheat oven to 350 degrees. Place 1/2 tablespoon whole wheat pastry flour in oven bag and shake to coat (as per package instruction)-discard excess.

In a small bowl combine the salt and dried seasonings. Loosen the skin on the turkey breast, rub 1/2 of the salt/herb mixture thoroughly between the turkey and skin. Spray outside of turkey with 10-15 sprays of I Can't Believe It's Not Butter or olive oil (in a mister, approx 1 tsp). Rub remaining salt/herb mixture on the skin with the olive oil or butter. (I did one on each side and could taste no difference)! Place fresh herbs and orange quarters in the cavity.

Place turkey in oven bag and seal. Cut 6 1/2-inch slits in the top of the bag. Place turkey in a roasting pan and in oven. Bake for 75 minutes to 2 hours, until meat thermometer registers 170 degrees. Remove from oven and let sit for at least 10 minutes to complete cooking and allow juices to settle!

Notes: Herbs can be changed to suit your tastes. Nutritional information includes both the butter spray and the olive oil. The orange flavor is not intense, you may use 2-3 lemons in place of the orange.
