Ingredients

    1 tsp Cooking Oil
    1 Lb Lean Ground Beef
    1 1/4 C Carrots, sliced
    3/4 C Onion, chopped
    1/2 C Light Cream Cheese
    1 Can Low-Fat Cream of Mushroom Soup
    1/3 C Milk
    1/4 C Salsa
    Salt, Pepper
    Tube of Refrigerator Country-Style Biscuits

Directions

Heat oil in large pan on medium. Add next 3 ingredients. Scramble fry for about 10 minutes until beef is no longer pink. Remove from heat. Drain.

Beat cream cheese in large bowl until smooth. Add soup. Stir.

Add beef mixture and next 4 ingredients. Stir. Transfer to ungreased 3 quart (3L) casserole. Bake, uncovered, in 375F oven for about 15 minutes.

Arrange biscuits on beef mixture. Bake, uncovered, for another 20 to 25 minutes until biscuits are golden.

    I agree: the nutritional info. makes this seem like it's much too fatty to make! Maybe using turkey burger instead, and nixing the biscuits would help? But then what would be the point? - 1/9/09
