Introduction

My mother used to make a salad like this every summer - I LOVED it. I put my own twist on it with rice vinegar instead of red wine and also some spice. Number of Servings: 6

Ingredients

    1 large english cucumber or 2 medium size
    1/2 medium onion, sliced into rings
    1/2 Tbsp. olive oil (I use garlic oil from Costco)
    about 1/2 cup seasoned rice vinegar (or to taste - I like it "puckery")
    1/3 tsp toasted sesame oil (this definitely changes the flavor, giving it a warm flavor)
    1 tsp "21 Season Salute" "Trader Joes spice blend
    black pepper

Directions

1.Thinly slice cucumber and whole onion. Separate onion into rings, put onion and cucumber in shallow bowl or pie plate.
2. Mix all other ingredients in separate bowl, taste and "tweak" if needed.
3. Pour vinegar and oil mixture into cucumber mixture and toss gently with spoon.
4. Refrigerate for at least 1/2 hour.
